Peppermint Cacao Bircher muesli

This recipe brings back childhood memories of mint-chocolate ice-cream at the seaside! What better way to start the day than with a dollop of nostalgia!

The peppermint and raw cocoa give the Bircher a real kick – perfect for those weekday early starts.

As with all Bircher recipes, soaking the ingredients overnight ensures that your breakfast bowl will be thick, fluffy and subtly sweet.

Ingredients for 2

  • 100g oats (gluten-free if intolerant)
  • 300ml almond milk
  • 30g chopped hazelnuts
  • 1 mashed banana
  • 1 tbsp raw cocoa powder
  • 1 tsp chia seeds
  • ½ tsp vanilla extract
  • ¼ teaspoon or 1 drop natural peppermint extract

Instructions (nice and simple!)

Mix together and stir all of the ingredients. Leave to soak, in the fridge, overnight or for at least 6 hours. Serve and enjoy!
