Quinoa Tahini Date Granola

As you know, we’re big fans of grain-free granola. It serves as a tasty breakfast, is great as a topping for smoothies and, by the handful, as a snack.

This Quinoa Tahini Date Granola is naturally sweet tasting, with the cardamom providing a uniquely delicious flavour.

It is made oil-free and free from refined sugar, although, with the end result, you won’t miss either.

Here, instead of our usual buckwheat, we’ve experimented with quinoa, although you could use buckwheat, millet or amaranth.

Ingredients

  • 200g oats
  • 50g quinoa
  • 20g flax seeds (linseeds)
  • 20g pine nuts
  • 50g chopped almonds
  • Seeds from 1 whole cardamom pod
  • 2 tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp vanilla powder
  • Pinch sea salt
  • 3 tbsp tahini
  • 50g chopped dates

Instructions (nice and simple!)

Into one bowl, mix the oats, quinoa, flax seeds, pine nuts, chopped almonds, cardamom, cinnamon, ginger, vanilla and salt.

Preheat the oven to 170 degrees.

In a separate bowl, whisk together the tahini with 3 tbsp water. Then stir into to the bowl of other ingredients. Try to ensure that all of the oats etc. are coated in tahini.

Empty the bowl of ingredients onto a baking tray and bake in oven for 20 minutes, stirring after 10 minutes, until everything turns slightly golden.

In the meanwhile, soak the chopped dates in warm water in a separate bowl.

Once the granola is ready, remove from oven. Drain the dates and stir into the granola. Let everything cool.

Enjoy with milk or yogurt, or sprinkle on smoothies or even salads.
